I will replace the wheel hubs and want to replace or upgrade my rotors. Any suggestions on the best rotors?

Honestly I don't think you need an "upgrade" like drilled or slotted rotors. They aren't going to make you brake faster. They are just for heat dissipation under heavy braking. The only reason I could see needing them is a cosmetic only type thing or you are towing your boat down a mountain frequently but in tow mode it will engine brake so you don't need it.

Just a standard rotor from a name brand will do fine, I've used EBC in the past and been happy with them.

Towing the boat is on relatively level ground from Palm Beach to the Keys.

Then I'd say just replace them with a standard rotor and pad. No need for the additional cost. I tow about a 4000lb camper from 1,863 altitude to 6,909 altitude in 1.5 hours so pretty steep hills at some points. Even coming back down the engine will brake for you in tow mode and hold about 60-65mph pretty easily. Very little braking is actually needed. I'm on stock brakes with no issues at all.
