2016 Ford explorer xlt 3.5

Paddle shifters don't do anything. I have sport mode and paddle shifters but they won't change gears in any setting. I've left the battery unplugged for 30+ minutes to try and reset the system and while it was unplugged I took the steering wheel apart to make sure the paddles were plugged in. Web search brings up nothing pertaining to them not working. Any ideas?

Also, the car drives great. No issues with anything mechanically that I can notice. But!, when I rip that gas pedal through the floor it produces a smell. Anytime the rpms get higher than normal operating rpms it smells like something is burning. I can't really describe the smell because it's not a normal smell I've smelled with any car. Also searching for the different smells cars make and related issues that come with said smell, non describe what I smell. It does slightly burn/irritate my nose. Any ideas?
